Stir Fry Veggies and Paprika Prawns on Polenta Disc


Mid week meals are not always the most organised. Sometimes you lack the patience after a long day at work however you want something healthy and quick that is equally satisfying for your taste buds. A few weeks back on a Wednesday evening I was extremely tired after a hectic day at work and lacked the patience to cook anything elaborate.

Since we were moving a few weeks back my fridge was pretty bare and I wanted to make use of the veggies left. I also raided my freezer to find a handful of prawns that I had left. I thought of making a quick stir fry with the veggies and pan frying the prawns with paprika and ginger. I teamed it with Polenta that I cut into a disc shape and soft boiled eggs. I must say that the husband was one happy well-fed man.

So here is my recipe for Stir Fry Veggies and Paprika Prawns on Polenta Disc.

Ingredients needed are:

  • Polenta – 1 cup
  • Prawns- 20 in number
  • Carrots- 2
  • French Beans- 150 gms
  • Button Mushrooms – 50 gms
  • Oyster Mushrooms- 50 gms
  • Coriander- a few sprigs
  • Birds eye chillies – 2
  • Tomato – 1
  • Garlic pods- 2
  • Ginger- 1/2 inch piece
  • Ginger powder- 1/2 teaspoon
  • Paprika Powder- 1 teaspoon
  • Olive oil- 2 tablespoon
  • Soy sauce- 1.5 teaspoon
  • Vinegar- 1/2 teaspoon
  • Sugar- A pinch
  • Salt to taste
  • Water – 2 cups
  • Eggs – 2


Method of Preparation:

Polenta Disc
Take a pan and add two cups of water and let it boil. Next add salt and add the Polenta. Mix well and let it cook till all the water is absorbed.  While it is still warm flatten it and use a cookie cutter to cut in a disc shape. This is your Polenta Disc ready.

Paprika Prawns
Take a pan and add 1 tablespoon of oil and let it heat. Next add paprika powder, ginger powder and salt and mix well. Then add the prawns and stir fry for 2-3 minutes untill the prawns are cooked. These are Paprika Prawns ready. Keep aside.

Stir Fry Veggies
Steam the French beans and carrots. Slice the steamed carrots into discs. Slice the mushrooms and keep aside. Finely chop the chillies, ginger, garlic and tomato.

In the same pan add the remaining oil and let it heat. Next add the ginger and garlic and stir fry till raw smell goes away. Next add the chopped tomato and cook for about 30 seconds. Then add salt, soy sauce ,vinegar and pinch of sugar and mix well.

Add the mushrooms and stir fry for a minute and then add the steamed carrot discs and french beans and mix well till they are heated through.

Your Stir Fry Veggies are now ready.

Soft Boiled Eggs
In the meanwhile boil two eggs until they are at the soft boil stage that takes about 6-7 minutes in boiling water. You can cook the eggs for about 12 minutes if you like the yolks completely cooked. Peel the eggs and keep aside.


The fun part is the plating. Take a plate add a serving of the stir fry veggies on one side and the paprika prawns next to it. Lastly lay the polenta disc and slice open a soft boiled egg. Garnish with sprigs of coriander.
