Avocado & Sun-dried Tomato Dip ( Middle Eastern Style)

Who is not guilty of picking more avocados than one needs because they are on a special price or simply because they are so delicious. I am a repeat offender of this avocado hoarding. What happens usually is that I end up with a couple of overripe avocados that go straight to the bin if they are not consumed within a day or two.

Last week I was guilty of this repeat offence and I had 3 overripe avocados staring at me from the fruit-basket.(#repeatoffender #overripeavocadoes)

But this time I was determined to save food wastage. My first thought was to make Guacamole but I decided to check my fridge for what staples I had available. I saw a tub of sun-dried tomatoes which was also begging to be used. That was my Eureka moment, I decided to pair the two together with middle eastern spices to make a delicious dip.

So here is Mumbai 2 Melbourne’s recipe for Avocado & Sun-dried Tomato Dip with Middle Eastern influences. Enjoy it as a spread over toast or with cheese and crackers or simply with chips and tapas. 

So what are you going to need to make the Avocado & Sun-dried Tomato Dip:O

Overripe Avocados – 2 to 3 

Sundried Tomatoes – 50 gms

Garlic Cloves – 2 in number

Extra Virgin Olive Oil- 2 tablespoon

Sumac – 1 teaspoon

Parsley flakes – 1 teaspoon

Sweet Paprika – 1 teaspoon

Paprika Hot – 1 teaspoon 

Salt to taste 

How to make the dip:

Take the skin off the avocados and remove the stone and add this to a blender/ food processor. Next drain the brine from the sun-dried tomatoes and wash them and drain them thoroughly. Add the drained sun-dried tomatoes along with two cloves of garlic to the food processor.

Add 1 tablespoon of olive oil with half teaspoon of hot paprika, sweet paprika and sumac. Blend till smooth paste. You can store this dip in a glass container add the remaining olive oil on top and sprinkle the rest of the paprika powders and sumac and parsley flakes on top. Cover with a tight lid and store in the fridge for 3-5 days. 

I love using leftovers and giving them a makeover while still making the output delicious. This Avocado & Sun-dried Tomato Dip was a super hit and my son gobbled it with toast for brekkie. We finished the dip in a day. 

I hope you enjoy making this dip as much as I loved bringing it to you. You can serve this Avocado & Sun-dried dip with halloumi and mini roma tomatoes or vegetable sticks.

  3. To be frank, I have heard avocados only in beauty products and seen as a fruit. Making something out of it is new to me. I am not sure if I will be able to make it look so delicious as your’s.
