So when she had her first child in 2010 she decided she wanted to empower mums to learn about healthy food and nutrition and healthy eating habits while providing a supportive environment for them to do so. ‘Busy Mum’s Guide to Weight Loss’  BOOK REVIEW

Being a food blogger and a recipe developer, I am always reading about food, flavour combinations and cuisines. Healthy food is what we totally believe in as a family. So when The Busy Mum’s Guide to Weight Loss book was sent to me I was super excited to review it. .

This book is a 28 day weight loss challenge. It is divided into recipes for breakfast lunch and dinner for week 1, 2, 3 and 4. There is a list of pantry ingredients stated to make grocery shopping super easy. There is section for exercises in the book which I absolutely loved. All the exercises can be done at home without needing any gym equipment. 

The best part about the book is the recipes which are super easy to prepare without much prep work needed. You have breakfast recipes, stir fries, curries, pasta, desserts and treats, bakes, fritters and smoothies. You can buy this book from The Healthy Mummy website. Click here

I decided to review one of the breakfast recipes as mushrooms and spinach our some of our all time favourite veggies at home.

‘The Busy Mum’s Guide to Weight Loss’  RECIPE REVIEW

Herbed Mushrooms & Spinach on Toast is one super easy Brekkie recipe that caught my eye while reading the book. As a mum time is of essence and this recipe takes less than 10 mins to prep and another 10 mins to cook. You need 2 slices of wholegrain or gluten free bread toasted to go with it.

Firstly take a pan, add olive oil and half a clove of garlic and then add baby spinach. Once wilted add salt and pepper. In another pan add olive oil and half of a garlic clove. Then add sliced mushrooms, salt pepper and fresh thyme leaves. Cover with a lid for a couple of minutes till cooked. Mash half an avocado and spread liberally on the toast. Add mushrooms on top and finally the wilted spinach. Top with some more cracked pepper. 

Your Super easy and Healthy Herbed Mushrooms and Spinach on toast is ready in a jiffy. Only 365 calories per serve with 18 grams of protein and less than 3 g of sugar.
