Eating healthy is extremely important to boost one’s exercise efforts. Wholemeal or Gluten free Pasta is lower in GI. Which means it is broken down by the body faster and keeps you fuller for longer. Pasta is extremely versatile as it lends itself well to sauces, bakes, salads and soups.
Mushrooms are a powerhouse of vitamins and low in calories and GI so perfect accompaniment to a pasta. In today’s recipe I have used Skinny milk to give the sauce base a creamy effect and the cheese I have used is unprocessed fresh Mozzarella which gives you the needed protein, calcium and healthy fats.
So this is a perfect after workout meal. Extremely easy to make and super delicious. Here is my recipe for Mushroom Penne in Creamy Herb Sauce.
What do you need for it ?
Penne Pasta – 250 gms ( Using Gluten free & Wholemeal variety)
Basil Leaves – 1/2 cup
Dried Parsley – 1 teaspoon
Garlic Pods- 4 in no
Birds eye Chilli- 2 in no
Button Mushroom- 50 gms
Mini Roma Tomatoes- 6- 7 in no
Milk- 1.5 cup
Water – 1/2 cup
Olive Oil – 3 tablespoon
Mozzarella- 50 gms
Pepper – 1/2 teaspoon
Nutmeg- a pinch
Sugar- 1 teaspoon
Prepare it with Mumbai 2 Melbourne now !
♦ In a food processor add basil leaves, garlic, birds eye chillies, sugar and salt and blend to a smooth puree. Next add 1.5 tablespoons of olive oil and blend again till emulsified. This is the sauce base ready.
♦ Cook Penne Pasta as per packet instructions until Al-dente. Slice the mushrooms and the mini roma tomatoes into two. Take a wok, add the remaining olive oil and let it heat.
♦ Next add the sauce base we prepared earlier and let it cook till the oil leaves the sides. This means that the sauce is cooked through. Now add the mushrooms and mix well. Add the milk and cover with a lid for 2 minutes.
♦ Add the sliced roma tomatoes, add salt and cracked pepper, nutmeg powder, dried parsley, sugar and mix well. Add half of the grated Mozzarella cheese. This will help thicken the sauce.
♦Once the sauce thickens to desired consistency, depending on how saucy you like your pasta, add the cooked pasta to it. Toss well to coat the pasta with the sauce and let it heat through for a minute.
Your Mushroom Penne in Creamy herb sauce is now ready to be eaten.
